I finally found a way to stop the updates from crashing my computer (which was a big deal because I run a number of VMs and when windows rebooted, it was as if I had a power failure.... not good.
Anyway, I followed the process at this page: https://www.windowscentral.com/how-prevent-windows-10-rebooting-after-instal ling-updates
I have a batch file that I run via a shortcut that temporarily enables/disables windows doing this. It's not perfect - MS still tries to run the software, but it can't force the computer to reboot anymore.
Not great, but it sure helps...

Gotta say - that's TOO Funny! Lucky I am Lazy about doing Updates - but, in this case - Laziness is a Godsend!
