My current LHBS is sort of like this. I'll walk in with a recipe, consisting of what I would think are fairly common malts, and he won't have them. then I have to try to re-work my recipe with what he has on hand, or come up with a whole new recipe on the spot.

I want to avoid that for my customers. It won't be possible to keep everything on hand, but I do want to have the most common ingredients available all the time.
